If you have a JoAnn's nearby, Simplicity patterns should be on sale for $1.99 on Monday. 5420 can make an adequate pioneer dress (use the long-sleeved sailor dress, and omit the sailor collar, or the blue flowered short-sleeved dress with a smaller collar). It also has pantalettes (although I think longer than Kirsten's--if your mother is good at sewing she can fix that) and a sunbonnet (for Kirsten's, definitely avoid the lace). It's not a perfect pattern, but it's the only one I have that's very obviously Kirsten, and it is mix-and-match, so it should be easy to remove pieces as needed.
Simplicity 5421 could be used for a nightgown (not one like Kirsten's, but a cute one nonetheless).
If you don't think your daughter will care much about accuracy, I'd probably try 5705; it will make Disney Princess dresses which are very cute. Obviously if Kirsten is supposed to be "historical" that won't work at all.
I have only heard BAD things about the Simplicity Sewing for Dummies pattern for dolls.
That bed sounds lovely! Good luck with the whole project; it sounds like things are quickly getting ready for Kirsten! (Who happens to be my favorite AG, by the way. )
